The days start to get longer, it still freezes at night and it warms up during the day. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;When I was little, we tapped trees up and down our street. They were all galvanized buckets and we collected it all by hand with 5-gallon buckets. We dumped the freshly harvested sap into a big collection tank on the back of my Dad's truck. Since we now have over 5,000 taps we no longer use any buckets. Everything is tapped in and connected with blue tubing. Which runs down at the bottom of the hill into big collection tanks. We produce so much more than maple syrup. Over the last few years, I worked on developing recipes for jams, cookie mixes, spice rub and maple barbeque sauce. Sugaring season is a New England tradition where as  spring is approaching the maple sap starts to flow. &lt;a href="http://www.lamothesugarhouse.com/"&gt; Lamothe's Sugar House&lt;/a&gt; is  one of the largest operations in Connecticut.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt; &lt;p&gt; &lt;/p&gt; &lt;p&gt;Bring your family to our farm and sugar house on Saturday or Sundays during  February and March to watch maple syrup being made.  Robert Lamothe and Ron  Bacon will go over the history of how maple syrup was once made and how it is  made today.  It is a facinating process for the whole family to enjoy and share  the experience.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Sample many of the maple products made at our farm, enjoy hot  maple coffee and mulled cider from a local farm and shop from our wonderful  selection of New England made products.
